Trifle custard

Mum always made the trifle custard from

scratch, but I found it a lot easier to use custard powder. Truth is, I am hopeless at making it from scratch on the stove.

Made in the microwave, it makes a yummy very smooth custard, no lumps!

You can add a beaten egg to the finished custard and mix it in thoroughly, after taking the it off the heat. This is nice too.

Just need to add sugar to taste, and make according to packet instructions.

When we were kids, we had a plastic spatula each and were allowed to scrape out the custard pot. And the whipped cream bowl. Mmmmmmmm. I loved helping mum cook!

We take the easy route

To start, you need one or two rolls of plain jam or jelly sponge roll, depending how big your trifle is going to be.

Be careful not to use the roll with jam and cream – it is disgusting in this trifle.

If you have children helping, be sure to have extra sponge – it tends to get eaten during the assembling process!

Having made your jello the day before, chop it up into cubes, or however you like, to put on the top of the custard.

Slice the sponge into 25mm pieces and lay them out on the bottom of the bowl you are going to use.

A glass bowl is good, because you can see the lovely layers of the sponge, custard, cream and jello.
