Christmas time

Slow cooking

the secret to a great sauce. The slow

cooking brings out the flavor in this recipe, and is simply delicious!

The lovely aroma of the sauce cooking is equally pleasant as the flavor!

Now get someone to stir the sauce. You don’t want to tax yourself, quite a bit to do yet. Stir, and add enough water to make a nice pouring consistency sauce.

If the sauce doesn’t turn out – you can blame them.

Getting hungry now, time to get out some Christmas nibbles – how about those yummy chocolate balls - and some drinks for the kids.

Then call Pa to get the champagne out.

pasta sauce

For a treat, Mum used to let us kids dip a piece of bread into the sauce while it was cooking away. It was yummy and still is!

Bring the sauce to the boil, and place uncooked prepared parcels into the sauce.

They need to be on the bottom of the pot, with the sauce just covering the parcels.

The parcels cooking in the sauce gives it a really lovely and different flavor.

Now turn heat down and simmer for a ½ to ¾ of an hour with the lid partially off until the sauce thickens.

Do not allow the sauce to become too concentrated, if it does, PANIC - quietly to yourself - and add some hot water. Then tell your Mum, that everything is coming along just great.
