Shortbread - a scottish treat
A traditional Scottish Shortbread, for Hogmanay,
or New Year, contributed by Louisa....
...This was given to my Mum by her friend about 30 years ago.
It was handed down to her from her Grandmother, who brought it out with her when she migrated from Scotland to Australia over 100 years ago!
My Mum bakes short-bread every Christmas, and we look forward to it.
We live in different states now, and Mum and Dad come to us for Christmas, and I really love this time together.
Shortbread And good ol’ Mum always brings the short-bread. We have to ration it out so it lasts more than a day because it is so good!
I don’t know what I would do if Ma didn’t bring the short-bread. Doesn’t bear thinking about.
Mum used pretty moulds especially for short-bread, but you can use a tray or pan, to cook them in, or a spring-form tin, the one that the bottom comes out.
Beware!! As I found out the hard way - You must cut the shortbread into the shapes you want, before you put it in the oven.
One year, I was helping Mum, and she said ‘Did you remember to cut the pastry before you put them in the oven love?”
‘Yes, yes, Mum’ - well I did – but only one - forgot to do the rest!
When we got them out of the oven -
Oh-Oh – trouble! - I tried to cut them with a sharp knife, but they just crumbled!!!!
Never mind – we had a feast that day of bits of shortbread.
