Scone recipe -

Now, to make your scone recipe, you will need

2 cups of self raising flour in a biggish bowl.

We used to tip the ingredients in, and Mum mixed the dough.

She didn't let us do it, because she said she didn't want grey dough!

Put in a generous pinch of salt and 1 dessertspoon of icing sugar and mix together.

Now, lightly rub in with your fingers, 2 dessertspoons of butter into the dry mixture until it has disappeared into the flour.

This is where you put the sultanas in if you wish.

Chuck in ¾ cup of milk, and mix thoroughly into soft dough, take it out of the bowl and knead lightly on a floured board.

Then roll out to about 1" or 25mm thick.

This is the bit I loved when I was a kid; it was my job to press out the round shapes.

Mum used to roll the pastry out, as this was a particularly dangerous time of the proceedings.

4 little terrors, taking turns to roll out the pastry, wielding a heavy rolling pin was a bit more than Mum could take!

This was also the time to taste the yummy mixture before it got cooked.

Sometimes she used to just roll out the pastry, and cut it into squares or triangles - whatever takes your fancy.

Now bake in a hot oven 475F 230C for 12 to 15 minutes.
