Our family pasta sauce

This is our family's basic Italian

Spaghetti sauce, here we use it to go with the stuffed meat parcels you prepared. As I mentioned, this is a Christmas specialty, but you can enjoy it any time....

Put on another Christmas CD, and dance around the kitchen pretending you are somewhere else – to get you in a great mood.

Back to reality - You will need a large pot to cook this dish, so the parcels can sit on the bottom and not piled up on top of each other – or they will not cook properly.

Chop finely a couple of onions and garlic cloves, and fry in a little oil -we always use olive oil.

Allocate this job to someone else if you can, tears will mess up your makeup.

Pour in a large can of peeled tomatoes

At this stage, you can throw in some red or white wine, whatever is handy.

Some for the pot and some for the cook! It’s Christmas - relax!

When the garlic and onion are done, pour in a large can of peeled tomatoes including the juice.

If not already chopped up in can, chop into small pieces before adding to the pot.

Now mix about 2 tablespoons of tomato paste in some hot water, and add to the pot.

Add a little bit of sugar, and salt to taste, and some Italian mixed herbs – dried herbs are good in this recipe.

Have another well earned cuppa and put your feet up.

Delegate someone to set the table and organize the drinks and marauding children.
