Maria's Leek and Potato Soup

2 leeks
4 or 5 large potatoes
200g bacon
Chicken stock using Massels or similar
500 ml milk
50g butter
5 tblsps olive oil
black pepper


Melt butter and oil in large saucepan on medium low heat. Add sliced washed leeks, cook gently until soften, add a little more butter if liquid going. Add chopped up bacon, fry until slightly brown.

Meanwhile cook in separate saucepan tbe peeled, chopped potatoes, when almost cooked, drain and add to the leeks and bacon. Add approximately 5 litres of stock made from chicken stock, or stock cubes dissolved in water. Simmer for at least half an hour, adding pepper to taste, when about to serve, add the milk and heat through....

Is very nutritious and filling, perfect with crusty bread!
