Involtini or meat parcels

These meat parcels, also known as involtini, are

just the thing to go with Louisa's family spaghetti sauce, also given here.

Lou says "We have these at Christmas time, and they are yummy and well worth the effort!

You can cook them anytime though."

This is how to prepare the parcels, and in the next section, is the sauce to cook them in.

Now, depending how many people you are cooking for – generally aim for one parcel each, with some to spare.

Put on the Christmas music, kick off your shoes, and have a good time.

Pretend you are in your 'favourite happy place' and away you go.

Gather as many family members as you can, many hands make light work!

You need pieces of topside steak, one for each person, flattened with a meat mallet to form a thin layer.

For example, a piece for one person, when flattened would be about the size of a side plate.

WARNING- Don’t do the meat bashing thing if in a bad or frustrated mood, as it is a bit of a delicate operation and you could go through quite a lot of meat.

One needs to be careful not to go too thin, or it will break when folding up into parcel.

This will indeed put you into a bad and frustrated mood if not in one before.

Put the prepared meat into the fridge until ready to roll the parcels.
