Herb mini muffins

1 cup flour
2 tsp baking powder
1 cup (100g) grated tasty cheese
1/4 cup chopped parsley
1 tbsp chopped fresh herbs
1 spring onion, chopped
1/2 tsp salt
1 tsp sugar
1/8 tsp cayenne pepper
1 egg
1/2 cup + 2 tbsp milk
In the same large mixing bowl, add the first 9 measured ingredients. Use fresh herbs that you like best, or you can plan for the herbs to go with a meal for example dill with salmon. Toss well to mix.
In a different bowl, whisk together the milk and egg. Pour the mixture into the dry ingredients and fold in together. Stirring enough to dampen the flour. Do not overmix.
Spoon mixture into mini-muffin pans that have been greased lightly.
Bake at 200 degrees C for 10-12 mins or until the centre of muffins spring back when pressed.
