- 1 liter of reduced salt chicken stock
- two to three potatoes
- about two handfuls of broccoli
- 1 cup of pearl barley
- 1 onion
- two carrots
- about four mushrooms
- 1 cup of spaghetti spirals
pepper, peel and chop up all the vegetables about 5cm thick - bite size pieces. Pour the contents of the chicken stock into a large saucepan. Add all the vegetables together to the stock along with the pearl barley.

Try this soup
Bring to the boil and then simmer for approx 30-40 minutes, you will know it's ready when the potato becomes soft all the way through. About 10 minutes before the soup is ready or just after you have tested the potato and it is soft. Add the pasta and leave it for the extra 10 minutes, check the pasta before serving, it should be cooked all the way through. Note: chicken may also be added. Just chop 1-2 raw chicken breast pieces to about the same size as the vegetables. Pan fry with a touch of extra virgin olive oil. First cook through and make a strong fried flavor. Add when the rest of the soup is done, just to heat through. (Only pan fry the chicken just before it needs to be added.) And that’s it!!! Easy isn't it? It really is a quick and delicious meal.
