Make gingerbread cake

Can't catch me I'm the Gingerbread Man!

Here we go with the recipe for

Gingerbread Cake. Use a fairly large baking tin or roasting pan, about 15"x10" or 38x25cm for the quantities here. Grease and line with baking paper.

1lb flour (454 gm) 1/2 tsp salt
11/2 tsp ground ginger
2tsp baking powder
1/2 tsp bicarbonate soda
8oz brown sugar (1 cup) (227gm)
6oz butter(170gm)
12oz treacle and/or golden syrup (11/2 cups) (340gm)
1/2pint milk (1 cup) (250ml)

Optionally you can add 1 egg, makes the cake more spongy.

Place dry ingredients in a mixing bowl.
Warm together sugar, butter and treacle/syrup.
Warm milk.
Beat the egg, if used.

Combine all ingredients, and mix thoroughly.

Pour into baking tin and bake in a moderate oven, 350F 150C until center is firm to the touch, about 11/2 hrs.
Allow to cool a little before slicing into squares.

Frosting is not necessary, but a lemon sugar icing goes well.
