Bachelor cake

I called this Bachelor Cake as that

described my circumstances. If this is your situation it is a very easy way to impress a young lady visitor. If not, it’s still a quick way to get a “home-made” taste.

This is a one bowl recipe my big sister gave me when I was living on my own (with only one bowl!). My flat in London saw many experimental 'easy recipes' tried, and few adopted. This one is still used occasionally.

SANDWICH-CAKE

  • 4oz (112g) soft margarine
  • 4oz (112g) sugar
  • 4oz (112g) SR flour
  • 2 eggs
  • 1 teaspoon Baking Powder

Throw the lot into a bowl and mix for 2 minutes. Divide into 2 small pans, (or one twice!).

Bake at 350°F 175°C for about 25 minutes.

That's it - what could be easier?

But wait - there's more!

  • To make Orange-cake, add the grated rind of an orange.
  • To make Chocolate-cake, swap one tablespoon of flour for one of cocoa powder.
  • To make Coffee-cake, swap one tablespoon of flour for one of instant coffee (for colour use a little cocoa, too).
  • Join the two halves with jam and cream or

    BUTTER CREAM.

    • 4oz (112g) icing or confectioners sugar.
    • 2oz (56g) soft margarine
    • 1 tablespoon hot water.
    • optionally cocoa, coffee, or orange as above

    Beat together and spread on one layer, place the second on top, upside down if you want a flat top for decorating.
