Black Forest Cake
Black forest cake is so named
because of it's origin. The Black Forest area of Germany (Schwarzwald) is in the extreme South-West of the country, where it borders France and Switzerland.
It is a great tourist region, being also well known for picturesque towns and cuckoo clocks!
The forest is not as dense and black as it once was, but there are still plenty of wooded areas, beautiful countryside and magnificent old buildings to make a visit worthwhile.
A typical example The main North-South Autobahn, from Frankfurt through the region, heads to the Swiss town of Basel, on the border of Switzerland, France, and Germany, a major through route to Italy and Austria too.
The towns of Baden-Baden, Freiburg, and Offenburg are worth making a detour. Strasbourg in France is just over the border from Offenburg. The river Rhine is the border here.
The local white wine is another attraction, several small wineries only sell their produce locally, as the quantities are small. Beer is also a feature of the area (Munich is nearby), although I prefer the beer from the Northern, industrial regions, like Dortmund.
The other liquid product which concerns us for this recipe is Kirschwasser, or cherry schnapps, see below. Another variant is Kirsch.
This not just another German chocolate cake recipe, it is grander than that - a Black Forest Cake recipe!
Even the name in German is impressive - Schwarzwälder Kirschtorte - Black Forest Cherry Cake.
Once again I looked for a recipe on the internet, and found several, all different!
Most have a different recipe method for the cake part, ranging from a cake mix to a full blown 6 separated eggs etc. They all have chocolate cake, cream, cherries and Kirsch.
We look next at the preparation.
