Black Forest Cake -
assembly & presentation

Next day we can assemble the black forest cake

Slice the two cakes horizontally in half so that you have four layers.

Remove the cherries from the can, (Don't throw out the liquid!!), and divide into three portions, with a few nicely shaped ones left for decoration.

These last few need to be dry as they will stain the cream - I didn't say you could lick them dry!

Place the bottom cake layer on a dish and pour approximately one quarter of the kirsch from the cherry can around it.

Goes great with a cappuccino

Position the cherries from one portion in a roughly even distribution on the cake.

Now pipe or otherwise place liberal amounts of sweetened stiffly whipped cream over the cake, before adding the next layer.

Repeat this for the next two layers, then position the top layer. Pour the remaining kirsch (no, not from the bottle) evenly over the top. It will soak in and leave a good decorating surface!

The decoration is free choice, I suggest cover with whipped cream, and strategically position the dried cherries around.

Finish with grated chocolate and curls made with a potato or vegetable peeler, and thin pieces of chocolate.

These are made by pouring melted chocolate onto foil or baking paper, and breaking into sections when cool.

Refrigerate for a couple of hours, or as long as you can stand it, then try to eat just one slice - delicious!
